Vegan Green Coconut Curry

Need some inspiration for dinner? Try this Thai Green Coconut Curry, filled with vegetables. We also make the Green Curry Paste from scratch, but you can of course also use it from a jar. Ingredients

400 ml coconut milk
60 g green curry paste (click here for the recipe)
250 g bimi
1 tbsp bouillon powder
250 ml water
2 tbsp palm sugar
2 tbsp soy sauce
3 kaffir lime leaves
125 g snow peas
400 g fresh tofu
1 tbsp sunflower oil
¼ tsp salt
195 g zucchini
80 g red pepper
12 g Thai basil

Method

1. Cut the fresh tofu into cubes. Heat a frying pan and add the sunflower oil. Add the tofu cubes and fry all around until golden brown. Set aside for now.
2. Place 150 ml of the coconut milk in a wok and cook over medium high heat until the oil begins to separate from the coconut milk. Stir occasionally. Add the Thai Green Curry Paste and stir until well mixed. Add the bimi along with the remaining 250 ml coconut milk.
3. Add the bouillon powder, water, palm sugar and soy sauce. Stir well. Roughly chop the kaffir lime leaves and add to the curry along with the snow peas, fried tofu and salt. Let it simmer on low heat.
4. Meanwhile cut the zucchini into half slices and the bell pepper into strips. Add to the curry along with the Thai basil. Let it simmer for a few more minutes. Serve with white rice.
