Vegan Soba Noodle Salad

In this incredibly, tasty, gluten free, vegan Soba Noodle Salad we used Broccoli & Cauliflower! It’s more than delicious! Did you know that Soba means buckwheat in Japanese? This is really one of our favourite salads at the moment. We can’t get enough of it, you should definitely give it a try.

Ingredients

60 g Tahin
2 tsp Peanut Butter
2 tbsp Soy Sauce
2 tbsp Rice Vinegar
2 tbsp Lime Juice
2 tbsp Maple Syrup

60 g Salad Mix
100 g Soba Noodles
200 g Cauliflower
100 g Broccoli
1 Green Onion
Coriander, to taste
Peanuts (roasted), to taste
