Vegan Peanut Butter Cookies

Who likes Peanut Butter? And who like Cookies? If you do, this you have to try! These vegan Peanut Butter Cookies are super easy to make and so tasty. They are really crunchy from the outside and soft from the inside. They melt in your mouth! They are really addictive so be careful, and otherwise to protect yourself, you can also store them in the freezer!

Makes: 12 peanut butter cookies

Ingredients

1 tbsp flaxseed, ground (Plus 2 tbsp water)

90 g flour
½ tsp baking powder
Pinch salt

55 g vegan butter, room temperature
50 g light brown sugar
50 g sugar
½ tsp vanilla extract
90 g peanut butter (made from 100% peanuts)

Method

1. Preheat the oven to 180 degrees Celsius.
2. Mix the ground flaxseed with the water and set aside for now.
3. In a bowl put the flour, baking powder and salt. Stir together and set aside.
4. In another bowl, put the vegan butter, light brown sugar, sugar and vanilla extract. Mix everything with a hand mixer until everything is well combined. Add the peanut butter and mix again with the hand mixer until smooth. Add the flaxseed (step 2) and beat until slightly fluffy. Add the flour mix and mix until everything is well incorporated into a nice dough.
5. Roll 12 balls from the dough with your hands and place on a baking tray lined with baking paper. Make sure there is some space in between as the cookies will expand a bit in the oven. Press the balls with a fork, both vertically and horizontally. Bake in the oven for 15 minutes. The cookies are very soft when they come out of the oven. Allow to cool on the baking sheet and then cool completely on a wire rack.
