Vegan Lemon Bundt Cake

This vegan Lemon Bundt Cake has such a fresh taste. The lemon flavour really gives that extra fresh kick! If you don’t have a bundt cake shape, no problem, you can easily make this in another cake tin. You can also store this cake in the freezer. We like to cut the cake into slices and freeze it. If you are craving for a slice, you only have to take it out of the freezer and let it defrost or heat it briefly in the microwave! You just have to try this lemon bundt cake to know how delicious it is. It’s easy and so tasty!

Ingredients

3 tbsp flaxseed, ground
6 tbsp (90 ml) water
220 ml oat milk
1 tbsp apple cider vinegar
Bread crumbs, for dusting the cake tin
350 g flour
½ tsp baking soda
½ tsp salt
220 g vegan butter (Plus extra to grease the cake tin)
300 g sugar
3 lemons, grated zest
3 tbsp (45 ml) lemon juice

Glaze
100 ml lemon juice
3 tbsp (40 g) sugar

Method

1. Preheat your oven to 180 degrees Celsius. Mix the flaxseed and water in a bowl and set aside for now.
2. Stir the apple cider vinegar into the oat milk and set aside for now.
3. Grease a bundt cake tin (23.79 cm wide and 10.16 cm deep) with some vegan butter. Dust the cake tin with breadcrumbs and beat out the remaining breadcrumbs.
4. In a bowl, stir the flour, baking soda and salt.
5. In another bowl, beat the butter and sugar (with a hand mixer) until fluffy. Add the flaxseed mixture and mix it well into the butter. Now mix on a low speed, little by little, the flour mix and oat milk mix until fluffy.
6. Fold the lemon zest and lemon juice into the light batter.
7. Spoon the batter into the bundt cake shape and smooth over the top with a spoon. Bake the bundt cake in the middle of the oven for about 50 minutes until a cake tester (wooden skewer) is carefully inserted in the center and comes out clean and dry.
8. While the bundt cake is baking in the oven, make the glaze. Mix the lemon juice and sugar together. Stir occasionally so that the sugar can melt in the lemon juice.
9. Remove the bundt cake from the oven and let it cool in the tin for 10 minutes. Then put a cooling rack on the cake tin, turn together and remove the mold.
10. Brush the bundt cake with the lemon glaze and allow to cool completely.

Tip: You can store this cake in the freezer when it has cooled completely. We always cut the bundt cake into slices and store it in the freezer. This way you can get a delicious piece of cake whenever you are in need! Let the cake slices thaw completely when they come out of the freezer or heat it briefly in the microwave.
