Vegan Chocolate Cake with Frosting

What’s better than making this delicious decadent and super easy vegan Chocolate Cake with a Chocolate Cream Cheese Frosting? We say, give it a try! When decorating the frosting don’t forget to make hearts shapes with the back of the spoon! This makes the cake look even more beautiful!

Ingredients

2 tbsp chia seeds, ground (plus 6 tbsp water)
180 ml mild olive oil
220 ml oat milk
1 tsp vanilla extract

175 g flour
45 g cocoa powder
195 g sugar
1 ½ tsp baking powder
¼ tsp baking soda
¼ tsp salt

150 g vegan cream cheese
100 ml oat cream
100 g dark chocolate, melted
3 tbsp powdered sugar

Method

1. Preheat the oven to 160 degrees Celsius.
2. Mix the chia seeds together with the water in a bowl. Add the olive oil together with the oat milk and vanilla extract. Stir everything well with a whisk.
3. In another bowl, add the flour, cocoa powder, sugar, baking powder, baking soda and salt. Stir everything together. Add the mixture (from step 1) and stir everything to combine until you have a smooth batter.
4. Grease a round baking tin (20 x 20 cm) and line the bottom with some baking paper. Pour the batter into the tin. Tap the baking pan on your counter a few times to knock out any air bubbles. Bake in the oven for about 50 minutes. If necessary, check with a skewer. Place the skewer in the center of the chocolate cake. When the skewer comes out clean, you will know the cake is ready. Allow to cool completely before removing the cake from the tin.
5. Meanwhile (while the cake is in the oven) make the frosting. Put the vegan cream cheese, oat cream, dark chocolate and powdered sugar in a bowl and stir into a smooth frosting. Frost on top of the cake!

Tip: If you have a coffee grinder, finely grind the chia seeds into a powder. Not only does this work super fast to use as a binder in the cake, but you also don’t taste the seeds. Grind some more and save for other recipes.

We use mild olive oil in this cake because it has a neutral taste. So don’t use an extra virgin olive oil. This can give a strange taste to the cake.
