Vegan Biscotti

You probably already have eaten or seen these cookies! If not then we are here to introduce you to these delicious vegan Biscotti cookies also known as Cantuci. These Italian cookies are super crispy and we mean super crispy. Be careful with your teeth! The purpose of this is that you dip them in coffee, tea or even sweet wine. The cookies are not only beautiful but also stay very crispy and tasty for a long time! Watch out because they are addictively delicious. 18 Biscotti cookies
Prep time: 20 minutes
Total time: 1 hour 15 minutes

Ingredients

90 ml water
2 tbsp (30 ml) mild olive oil
1 tsp almond extract
1 tsp vanilla extract
130 g sugar
Lemon zest from 1 lemon
Orange zest from 1 orange

260 g flour
1 tsp baking powder
Pinch salt

100 g almonds

Method

1. Preheat the oven to 180 degrees Celsius.
2. Put the water, olive oil, almond extract, vanilla extract, sugar, lemon zest, orange zest into a bowl and stir together. Set aside for now.
3. Mix the flour, baking powder and salt in a bowl. Add the wet ingredients to the dry ingredients and mix everything to combine.
4. Coarsely chop the almonds and fold into the dough.
5. Dust your work surface with some flour and place the dough on your work surface. Sprinkle some flour over the dough as well. This makes it easier to work with the dough because it’s a wet dough. Divide the dough in half and make two equal log shapes (both 25 cm long and 2,5 cm high).
6. Place the logs on to a baking tray with parchment paper. Bake in the oven for approximately 35 minutes or until they turn light brown. Remove from the oven and allow to cool for 5 minutes. Do not turn the oven off yet. Cut the logs into angled slices about 2 cm wide. (Don’t worry if it starts to crumble a bit.) Place the cookies on their side on the baking tray. Bake them for about 20 minutes. Allow to cool completely on a wire rack.

Tip: The biscotti cookies should be hard and crispy. Delicious to dip in your coffee, cappuccino, tea or a nice liqueur 😉
