Vegan Baci Di Vegana

Baci Di Vegana! Inspired on the classic Italian cookie Baci Di Dama, which means lady kisses. These cookies are so easy to make and delicious to eat next to a cup of coffee, tea or whatever you like. We hope you enjoy it!⁣ Let us know in the comments below if you ever tasted these delicious vegan cookies.

Makes: 10 cookies

Ingredients

120 g vegan butter, at room temperature
100 g sugar
2 tsp almond extract
120 g almond flour
Pinch salt
120 g flour
Vegan chocolate spread

Method

1. Put the vegan butter in a bowl together with the sugar and almond extract. Mix well with a hand mixer. Add the almond flour and a pinch of salt and mix again with the hand mixer. Finally add the flour and mix to combine. Place the dough in the refrigerator for 15 minutes.
2. Preheat the oven to 180 degrees Celsius. Remove the dough from the refrigerator and roll them into 20 small balls between the palms of your hands. Place on a baking tray with parchment paper and bake in the oven for 20 minutes.
3. Let the cookies cool completely. Spread a spoonful of vegan chocolate spread on the bottom of a cookie and place another cookie on top (see video).
